Pineapple Chicken Skewers
Ingredients:
-Chicken
-Pineapple
-Red onion
-Tomatoes
-Bell Peppers
-Rice
Marinade:
-Soy Sauce
-Sesame Oil
-Minced garlic
-Onion powder
-Garlic powder
-Freshly grated ginger
Directions:
Begin by cutting your chicken into 1-inch chunks. The chicken needs to marinade for at least 2 hours for best flavor. Add chicken to a zip loc bag and then add the marinade ingredients. Allow this to mix well in the zip loc and sit for at least 2 hours to absorb flavor. You can prepare your other ingredients to have ready. Cut up your pineapple, red onion, and bell peppers. This should be in about 1-inch chunks. Tomatoes you will want cherry to leave whole. Do not forget to soak your bamboo skewers to avoid catching the wood on fire. Once chicken has marinaded long enough you can assemble your skewers. I like to add about 2 chunks of chicken, then pineapple, red onion, bell pepper, and tomato. Repeat this process about 2 more times or until your skewer is full. Continue until you have reached the desired amount of skewers or you have run out of your ingredients. I like to cook these on the smoker. These can be baked in the oven as well. Set the smoker grill to 350℉ or the oven and cook for about 20-30 minutes or until chicken's internal temperature is 165℉. While the skewers are cooking, I prepare rice and then will serve over a bed of rice. You can add soy sauce or any other favorite sauces to the dish. Sweet Thai chili sauce is a great pairing. Enjoy!
