mexican street corn

Ingredients:
-Corn (Corn on the cob, frozen, or canned and drained)
-Mayo
-Plain Greek yogurt
-Lime
-Minced Garlic
-Chili powder
-Cumin
-Smoked paprika
-Garlic powder
-Onion powder
-Fresh cilantro
-Salt
-Cotija cheese
Directions:
Place corn on a smoker friendly pan. (You want a pan with holes to absorb the smoke flavor). Allow to smoke on the smoker for about an hour or until corn is cooked. I put my corn on at 225℉. Once corn is done to desired “doneness” allow it to cool. While the corn is cooking, prepare the sauce. Mix about ¼ cup of mayo and plain greek yogurt together. Add in seasonings. Juice one to two limes and add to the sauce. For extra lime flavor you can zest a lime first before juicing. Add in chopped cilantro and then the cheese. Mix all until well combined. If corn is cooled add to the sauce until all is well incorporated. You can top with extra cotija, cilantro, and lime wedges.
